Today I have a recipe to share with you. These delicious and dense muffins taste like they’re made with white flour. Except they’re not. Instead of using white flour that has no nutrients whatsoever, I used chickpea flour. I promise these muffins don’t taste like chickpeas though.
Healthy Chocolate Chip Muffins {With Chickpea Flour} – Makes ca. 7 muffins
Ingredients:
- 1 1/2 cups chickpea flour (I buy my chickpea flour at Goodness Direct)
- 1 egg & 5 egg whites
- 4 tablespoons apple sauce (I use unsweetened)
- 1/2 teaspoon baking powder
- 2 tablespoons chocolate chips
- Sweetener of choice (I used stevia: 3 packets NuNaturals stevia or ca. 7-12 drops liquid stevia). You can also use honey: about 2-4 tablespoons.
- 1-2 tablespoons chopped walnuts (Optional)
- Dash of cinnamon (Optional)
Instructions:
1.) Preheat your oven to 160°C (= 320°F). If you don’t have a non-stick muffin tin, I suggest you line it with muffin or cupcake paper/molds.
2.) Put all the DRY ingredients into a bowl and mix well. Put all the WET ingredients into a separate bowl and mix well.
3.) Pour the WET ingredients into the bowl the DRY ingredients are in and whisk well with a fork. Make sure there are no clumps of flour.
4.) Pour the mixture in your muffin tin.
5.) Put the muffin tin into the oven. Let the muffins bake for 25 – 30 min. Keep your eyes on them and check back on them every now and then.
When I was done taking pictures, I enjoyed a warm muffin with cream cheese. My taste buds were having a party.. so delicious!
If you don’t eat these muffins all at once (like I was tempted to), then you can freeze them. I froze some and will be devouring them in the next couple of days.

ReplyDeleteChickpea flour is one of those ingredients that I've been meaning to buy for years, but hasn't yet made it into my shopping cart. These muffins look SO good though; I think they're provided the extra incentive I need to make the leap into the world of chickpea flour baking! Chocolate + walnuts is one of my favorite combinations of all time. Yum!
