I woke up really early this morning because of a cough (allergies). After laying in bed wide awake forever and some more, I decided to finally get up and make breakfast. These fluffy, healthy, high protein and fiber pancakes made my morning much better.
Fluffy Coconut Protein Pancakes (Makes 1 Serving)
- 1 serving protein powder
- 2 tablespoons coconut flour
- 1 tablespoon whole psyllium husks
- 1 egg & 1 egg white
- 1/2 teaspoon baking powder
- 1/8 teaspoon xanthan gum (I think it would work without as well.)
- 50 ml (2 oz.) and 5 tablespoons of water
- Sweetener of choice (I used two packets of stevia)
- Dash of cinnamon (Optional)
1.) Preheat your stovetop to medium heat. Put some oil (I use olive oil) or non-stick spray in your pan to prevent batter from sticking. Pancake fails are no fun.
2.) Put all the dry ingredients into a bowl and mix. Then add the wet ingredients and mix well.
3.) Take a heaping tablespoon of pancake batter and put it into your pan. Immediately spread the batter around a bit to form a circle, with a spoon. Flip the pancake once one side is done. Repeat this stage until all the batter is gone. It makes about 6 to 7 small pancakes.
4.) Top with your favorite toppings and enjoy!
